I think we’ve established that I have a bit of a love affair going on with brownies. With over a dozen brownie recipes on this website, I clearly love them.

This recipe for the Best Ever Brownies still stands as my go-to chocolate happiness. It’s a favorite with the whole family and with so many of you as well!

Coconut Brownies

This Coconut Brownie recipe is based on the very popular Cocoa Powder Brownies. We’re just going to mix things up with a few handfuls of coconut and chocolate chips.

This is such a simple brownie recipe to make with ingredients that you likely already have in the fridge and pantry.

The chewy sweet coconut along with the melting chocolate chips work to turn the already awesome cocoa powder brownies into something new and fantastic.

Cocoa Powder Brownie Ingredients

If you keep your house stocked with everyday baking essentials, you’ll be prepared whenever a chocolate brownie craving arises.

  • butter
  • white sugar
  • eggs
  • vanilla extract
  • cocoa powder
  • all-purpose flour
  • baking powder
  • kosher salt
  • sweetened flaked coconut
  • semi-sweet chocolate chips

Coconut Brownies Recipe

  1. Preheat the oven to 350°F. Grease an 8×8-inch pan** with butter or line with parchment paper. In a large bowl, whisk together the melted butter and sugar.
  2. Add the eggs and vanilla. Beat until well incorporated. (Beating in the eggs well is what forms that signature brownie crust on top.)
  3. Add the flour, cocoa, baking powder, and salt. Stir just until incorporated. Add the coconut and chocolate chips and stir once more.
  4. Pour the batter into the prepared pan. Sprinkle with additional coconut and chocolate chips, if desired.
  5. Bake for 24 minutes or until the center is set. Let cool at least slightly before cutting into bars.

Ingredients 

  • ½ cup butter melted
  • 1 cups white sugar
  • 2 large eggs room temperature
  • ½ teaspoon vanilla
  • ½ cup cocoa powder* see note
  • ½ cup all purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup sweetened flaked coconut plus an additional 1-2 tablespoons for topping
  • ½ cup semi-sweet chocolate chips plus an additional 1-2 tablespoons for topping

Notes

*I like to use dutch process cocoa powder in my brownies. It has a richer, deeper chocolate flavor is is much darker. I use regular cocoa powder all the time too and they turn out great. So use whichever you feel like.
** A double batch of this recipe will fill a 9×13-inch pan. Bake for 28-32 minutes or until the center is set.
