Oreo Brownie
Brownies are a fun treat for a kid’s party or just about any other occasion. These brownies were a ridiculous hit with my kids. All three of the boys thought it was crazy exciting to have Oreos IN their brownies.
If you’re anything like me, you are going to be slicing off slivers of these brownies each time you pass through the kitchen as well. I consider myself an expert in this department.
The Oreos make this a very rich brownie. I sliced the brownies pretty small and we felt that was plenty for each serving. Served hand-held or with a scoop of ice cream on top, this is sure to be a dessert that the kids will love!
Stirring the cookies into the brownie batter along with placing cookie pieces on top guarantees that each bite of gooey fudge brownie will be filled with chunks of Oreo cookies.
Using semi-sweet chocolate chips melted into butter is just the beginning when it comes to these fudgy treats. Once you have melted the butter and chocolate don’t forget to temper your eggs a bit.
To temper the eggs. I like to first whisk my eggs. Then add a little bit of the warm butter and chocolate mixture to my eggs while whisking them, continuing to add the melted butter mixture until I have slowly incorporated everything into the eggs. It should be smooth and shiny.
When the batter is smooth and shiny add the remaining dry ingredients followed by the Oreo chunks and of course more chocolate chips. With only ½ cup of flour, trust me when I say these are deliciously fudgy.
Oreo Brownie Recipe
- butter
- semi-sweet chocolate chips
- light brown sugar
- vanilla
- eggs
- all-purpose flour
- kosher salt
- Oreo cookies
Brownies with Oreos
- Preheat oven to 325°F. Line an 8 or 9-inch square pan with parchment paper. (You can also line with foil and grease it very well with butter or baking spray.)
- Melt the butter in a large saucepan, over medium heat. When the butter has melted, add 1 cup semi-sweet chocolate chips and stir until they have melted. Remove from the heat, add the sugar and stir to combine.
- Add the vanilla extract and the eggs. Whisk or stir until smooth and shiny. Add the flour and salt and stir to combine.
- Chop each Oreo into quarters, and set aside 8-10 Oreo cookie chunks for topping. Stir the chopped Oreos into the batter, along with the reserved chocolate chips. Spread the batter into the bottom of the prepared pan and then place the remaining Oreo chunks into the top of the batter.
- Bake for 28-30 minutes, or until an inserted toothpick shows moist crumbs. Let the bars cool completely before slicing. Enjoy!
Baking Note: In lieu of the parchment, you can line the pan with foil and grease it well with butter or baking spray. Lining the pan makes the brownies very easy to slice. Simply lift the brownies out of the pan, using the edge of the parchment or foil. Set the sheet of parchment or foil-lined brownies on a cutting board and slice into squares.
