These Peanut Butter and Jelly Ice Cream sandwiches feature soft peanut butter cookies, vanilla or raspberry ice cream, and a layer of fruity goodness. It is the classic PB&J sandwich remade into a fun afternoon treat.

This recipe was inspired after a week of too many peanut butter and jelly sandwiches at work and the need to change it up from just grape jelly. My sugar-loving mind has the ability to turn anything into a dessert. This treat was born.

Let’s get back to making these Peanut Butter and Jelly Ice Cream Sandwiches it is not particularly complicated. However, a few tips will help you avoid a sticky melted mess.

As far as actually making these peanut butter and jelly ice cream sandwiches, I probably don’t even need to tell how as a picture is pretty self-explanatory. However, I will give you a few tips to make the best ice cream sandwiches ever.

Peanut Butter Cookie Ice Cream Sandwiches

Start with a good peanut butter cookie. My favorite is these Old Fashioned Peanut Butter Cookies. Spread a layer of your favorite jelly on the bottoms of the peanut butter cookie. Freeze for 20 minutes.

Place a scoop of slightly softened ice cream on your cookie. (A sturdy ice cream scoop is a must-have, order my favorite scoop here!) Lightly press the ice cream out to the edges. Top with another cookie and back in the freezer for 20 minutes to firm it up.

Ingredients 

  • 12 peanut butter cookies
  • 6 Tablespoons jam or fruit puree
  • 2 cups strawberry or vanilla ice cream

Instructions 

  • Spread a tablespoon of jam or fruit puree on the bottom of 6 of the cookies. Place in the freezer for about 20 minutes.
  • Remove from the freezer and place a scoop of ice cream on top of the jam. (Try this ice cream scoop a kitchen MUST HAVE!) Top with another cookie freeze for 20 minutes.

Notes

You can enjoy these cookies as soon as you put the ice cream on for a slightly softer bite. These cookies can also be stored in an air-tight container in the freezer for up to a week.
