Finish each one off with a squeeze of lime and a scoop of sour cream or guacamole. This is a dinner that never fails to make everyone smile.

I’m a big fan of easy dinner recipes that can be made with just a few ingredients. Meals like Sweet and Spicy Chicken Stir Fry, BBQ Meatloaf, Cheesy Sausage Pasta, Crockpot Sweet and Sour Meatballs, Mexican Pulled Pork, and French Bread Pizza are all things that can be pulled together with very little effort.

Chicken Pot Pie Casserole with Biscuits takes a bit longer but is downright mouthwatering with its piping hot filling of tender chicken and vegetables, topped with flaky, golden-brown biscuits.

  • chicken thighs or breasts, cut into strips
  • taco seasoning
  • onion, sliced into strips
  • bell peppers, sliced into strips
  • optional: lime juice, sour cream, or guacamole

Fajitas vs Tacos (aka What is a fajita?)

Originally, “fajita” was used to describe the cut of beef (a skirt or “fajita” steak) used in traditional fajita recipes. Today, that is no longer the common definition and the word fajita is used in the U.S. to reference all kinds of fillings, like chicken, pork, or seafood.

The meat in fajitas is usually combined with strips of sautéed or grilled peppers and onions. The meat and vegetable mixture is typically served alongside a stack of warm tortillas.

When ready to eat the fajitas, you’ll fill each tortilla with the warm meat and vegetables along with the optional toppings of your choice.

When making tacos, the vegetables are chopped and served raw as a topping for the tacos. Tacos can be prepared all at once or individually assembled by each person.

Easy Fajita Recipe

  1. Combine the chicken, 1 tablespoon of oil, and 2 tablespoons of taco seasoning in a mixing bowl. Toss well to thoroughly coat.
  2. In a large non-stick skillet, heat the remaining oil over medium heat. Add the chicken and cook, while stirring constantly, for about 3-4 minutes. Transfer the cooked chicken to a plate next to the stove.
  3. Add the onion and bell pepper to the hot skillet. Cook until slightly crisp and still tender, tossing gently with tongs periodically. Sprinkle with remaining taco seasoning.
  4. Return the cooked chicken to the skillet and stir to combine. Serve immediately with tortillas. Squeeze lime over the chicken mixture and top with sour cream and/or guacamole as desired.

Ingredients 

  • 2 tablespoons light flavored olive oil, divided
  • 1 1/2 lbs boneless skinless chicken thighs or breasts sliced into very thin strips
  • 3 tablespoons taco seasoning, divided
  • 1 small yellow onion sliced into thin strips
  • 2 large bell peppers, red and green sliced into thin strips

For Serving

  • fresh lime juice
  • sour cream
  • guacamole

    I made this today and my husband said at least 5x, ” This is so good!”. I didn’t use taco seasoning, I used fajita seasoning and followed the recipe as is. It came out so good! and it didn’t take long either. Will definitely be making again! Thank you!

    I didn’t use the taco seasoning (I did a homemade one), but I still followed this recipe the rest of the way, and my chicken fajitas turned out great! That little bit of lime juice on top definitely brightens up the whole dish! Will use this recipe again!

    Wonderful recipe. Made my own fajita seasoning and added tomatoes. We had it as a salad and loved it! Also used leftover rotisserie chicken. Very yummy. Thanks!

    Going to make this tonight, but do you think the chicken can be made earlier with the spices in a ziploc bag? Maybe just for a couple of hours at most.
