This recipe was inspired after a week of too many peanut butter and jelly sandwiches at work. Some days I am motivated and have wonderful, healthy lunches and other days I end up with a peanut butter sandwich; the result of not getting up early enough. At work I was dreaming up how I could improve the classic sandwich for a better lunch and of course my sugar-lovin’ mind turned it into desert. Now this doesn’t solve my lunch problem, but it did create a fun easy treat for Tyler and I one very hot evening.

Lately, I have been into switching up traditional deserts and presenting them in new ways, like my S’mores Squares or Peanut Butter Cookie Milkshake. These Root Beer Float Cookies are a new spin on a traditional summer treat, although I can’t take original credit for them. For my wedding shower someone gave me a cute gift that included root beer extract and a recipe for these adorable float cookies. Last weekend, I was digging through my cupboards to find something and stumbled across the extract. It’s sad how cluttered my cabinets have become after being married for just over a year. I’m going to blame it on my very limited cupboard space and my habit of collecting random ingredients, cute plates, and lots of fun sprinkles!

However, when I asked Tyler if he thought the pictures were blog worthy, he advised me to make another batch and re-shoot the pictures the next day. I naively took his advice, but as we were going to bed he casually mentioned that he thought the pictures were actually good enough and he thought that it was a good way to convince me to make them again. Cookie Butter! Have you tried the stuff? The first jar I ever had, I ate completely with a spoon while I sat in front of my computer and studied for the CPA exam. In fact I may have ran down to my kitchen and had a spoonful before I even had the first two sentences of this written, because the cookies I made for this post have been long gone! If you have never had it, you should walk out to your car, find the nearest Trader Joe’s and pick up yourself a jar (or maybe a case!). Until last year, I lived where the nearest Trader Joe’s was probably 3 hours away (probably why I didn’t discover this treasure sooner), and was I missing out! After you pick yourself up a jar, you’ll want to make these cookies; they are easy, quick, and one of my favorite things to do with cookie butter.

First week of work is finished. I felt so important to be driving to work everyday with all the other cars, going someplace important just like each of them. That’s probably a weird thing to be feeling. Regardless, it was great to be working again, letting my eyes go all bleary over spreadsheets, and twisting my mind around invoice processes. Ok, I’m an accountant let me be. Also, don’t ask my husband what he ate this week. I woke up, went to work, came home and went to sleep. I’m going to give myself a couple weeks to ease into this big girl job.
