Once you’ve made the most delicious brownies from scratch, you’re going to want this brownie mix for your next craving. You can make your own brownie mix with cocoa powder in just a few minutes.

Keep the mix in a jar in the pantry and anytime you feel the need for homemade brownies, you can quickly stir up a batch.

How To Make Brownie Mix

To make a homemade brownie mix, you’ll need a large bowl and whisk and the following ingredients. I like to double or triple the batch so I have brownie mix on hand. 

  • All-purpose flour
  • White sugar
  • Cocoa powder (I like to use dutch process, but I’ve also used regular and they turn out great too)
  • Baking powder
  • Salt

Dump all the ingredients into a bowl, whisk together well and store in a jar or tightly covered container. Tada! Homemade brownie mix couldn’t be easier.

How to make brownies from brownie mix?

Now, when you want a batch of brownies, measure out 3 and 3/4 cups of brownie mix and dump in a large bowl. (That’s one batch as written below.)

Add 4 room temperature eggs and 1 cup melted butter to the brownie mix, plus 1 teaspoon vanilla extract if desired. Stir well. Pour into a greased 9×13-inch pan and bake at 350°F. 

If you prefer a smaller batch of brownies in an 8×8-inch pan, you can make a half recipe. Just use 1 3/4 cups plus 2 tablespoons of brownie mix plus 2 eggs and 1/2 cup melted butter.

Can I substitute butter for oil in brownie mix? 

Oil and butter can be used interchangeably in brownies. I like using melted butter best because it gives a great flavor.

Vegetable oil is admittedly easier to use since you don’t have to mess with melting it. Oil will also provide some additional moisture since oil coats the proteins of the flour and butter soaks in. 

In the past, I’ve used half butter and half oil for my brownies in order to get both the buttery flavor and more moisture too.

What else can I use homemade brownie mix for? 

Besides making a traditional pan of brownies when the craving hits, you can also use the box mix to make fancy brownies. I like to double or triple the batch so I have mix on hand for several batches of brownies at a time.

Homemade brownie mix is a great DIY pantry staple. Simply add some mint extract and use a pan of brownies as a base to my Mint Brownies with Chocolate Ganache.

You can also add chocolate chips, nuts, peanut butter cups, crushed Oreos, or whatever add-ins your heart desires to take these brownies up a notch.

Ingredients 

To make the mix

  • 1 cup all-purpose flour
  • 1 cup cocoa powder *
  • 2 cups sugar
  • teaspoons baking powder
  • ½ teaspoon salt

To make brownies with the mix

  • 4 eggs room temperature
  • 1 cup butter melted
  • 1 teaspoon vanilla optional

Instructions

  • To make the mix, whisk together the flour, cocoa, sugar, baking powder and salt until well combined. Store in a jar or another tightly covered container.

Brownie Instructions

  • Preheat oven to 350°F. Add 3¾ cups (1 batch) of this brownie mix to a large bowl. Add the eggs, butter, and vanilla. Stir well to combine.
  • Pour into a greased 9×13-inch pan**. Bake for 28-32 minutes or until center is set. Remove and cool before cutting into bars.

*Either regular or dutch process cocoa powder is fine. Dutch process cocoa powder makes them darker and richer.
**You can make brownies for an 8×8 or 9×9 pan too. Simply use 1 3/4 cup plus 2 tablespoons of brownie mix, 2 eggs, 1/2 cup melted butter, and 1/2 teaspoon vanilla.

    Oops I used the whole mix…I was gonna make brownie cookies called buck eye cookies…after mixing it some i realized it said family size brownie mix…I don’t know how many boxes your recipe makes…help lol ???

    Used measurements for 8×8 pan. 1 egg, 1/2 vegetable oil. It seems too chunky. Usually box brownies you can pour. This is thick; almost solid. Is this right?

      Yes. It will be a thick batter. Just make sure you spoon and level the flour into the measuring cup to avoid packing in the flour.

        The recipe still isn’t updated. So is it 4 eggs for the whole batch? And add more oil? Also it says 1 batch is 3 3/4 cups of dry mix but the dry ingredients listed add up to 4 cups. So do you use all but 1/4 cup of the mix? Confusing.

          You’ll use 4 eggs for the recipe as written for a 9×13 pan of brownies. Once you’ve stirred all the dry ingredients together, the flour will be a tiny bit more compacted and it typically adds up to 3 3/4 cups total. I’ve written it this way to avoid confusion. (But clearly it isn’t working – sorry about that!) I’ve done my best to clarify it above. Let me know if you still have questions.

    Used oil in replace of butter… batter was super thick and wouldn’t even pour into the pan. Had to pay them into the pan. Only baked them 25 minutes and they’re dry and crumbly. Somethings not right in the recipe…
