Pizza Grilled Cheese

My kids have loved grilled cheese sandwiches ever since they were little. And, I loved how easy it is to make them. It’s great as a hot snack or as a hearty lunch option.

I adore a grilled cheese dipped in warm tomato soup. Or, served alongside an array of fresh veggies with ranch dip. Or with a salad. No matter how you present this sandwich at my house, it’s a hit.

I’ve even been known to add sliced meat to grilled cheese in the past. But, this pepperoni grilled cheese sandwich is something else entirely. It tastes too good to be this easy to make.

Something magical happens when the shredded cheese envelops sliced pepperoni and fresh basil with rich pizza sauce. But, don’t take my word for it. In less than ten minutes, you could be eating one yourself!

Heat a nonstick skillet over medium heat. (If your stove runs hot, start at medium-low.) Spread plenty of soft butter on the outside of both pieces of bread. Drop one slice of bread, buttered side down, into the hot skillet.

Cover the slice of bread with half of the shredded cheese. Drizzle lightly with pizza sauce. Spread the halved pepperoni slices atop the sauce and sprinkle with shredded basil.

Top with the remaining cheese and the second slice of bread, butter side up. Then, cover the pan with a lid – this is important, so don’t skip this part. Let the sandwich cook undisturbed for at least a minute.

Uncover and check to see if the bottom slice of bread has browned. Let cook until golden brown, usually about 3 minutes per side on medium heat. Use a thin spatula to carefully flip the sandwich over. Cover with a lid once more.

If the cheese isn’t melting as quickly or smoothly as you’d like (especially when using pre-shredded cheeses) add a teaspoon of water to the edge of the pan and quickly cover with the lid. The steam helps melt the cheese.

Check to see if the second slice of bread is golden brown. When it is ready, remove the sandwich to a plate and serve warm.

Pizza Like Food

Pizza-like foods have always been a staple at my dinner table. My kids devour these homemade pepperoni pizza rolls. And, this french bread pizza makes dinner a breeze on a busy weeknight.

Looking to impress at the next big game? Whip up a batch of this pepperoni pizza dip and you’re sure to get rave reviews. It’s all the gooey, savory goodness you could ever want when snacking.

These pizza sliders have been a hit every time I’ve made them. They’re incredibly easy to make, and they hit way above their weight class in the flavor department.

Toasted sourdough bread is loaded with melted cheese and mouthwatering strips of perfectly cooked bacon in this bacon grilled cheese.

I also recommend giving this chicken cordon bleu pizza a try. It’s chock full of chicken, ham, bacon, and cheese, layered with alfredo sauce, and it makes dinner into something fabulous.
