Pear Crumble
Slightly chewy with that irresistible buttery, brown sugar, and oat crust and topping, these pear crumble bars are great both on their own or served warm topped with ice cream.
Crisp fresh pears are one of the best fresh fruit snacks in the fall and winter. They seem to get devoured the minute they cross into the house. So you can bet when I found myself with a surplus gifted to us this winter I squirreled them away to do some baking.
Pear crumble bars are a great winter dessert. They are easy to serve, perfect for a hand-held treat or an after-dinner dessert topped with ice cream.
Best of all, they are not overly sweet. This makes them ideal after a big meal when you just want a little something sweet, but chocolate or other super rich things don’t appeal.

When making this recipe, the crust and the crumb topping are the same thing. You’ll simply divide that portion of the recipe and reserve the topping for last.
To form the crust you will press half of the crumbly dough into the bottom of the pan. Top the crust with the sliced pears and sprinkle them generously with cinnamon sugar.

To make the beautiful crumb topping, scatter the remaining crumble evenly across the pears. There will be pears peaking through, as it is meant to be a streusel-like topping, not a full crust.
Pop the pan in the oven until the crust turns golden brown. Serve warm straight from the oven or let cool completely and slice into servings.

- 4 cups thinly sliced pears about 5 pears worth
- ½ cup granulated sugar
- 2 teaspoons cornstarch
- ½ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
Crust Ingredients
- 1 cup butter melted
- 1 cup light brown sugar packed
- 1 egg
- 1½ teaspoons vanilla
- 2 cups flour
- 2 cups oatmeal
- 1 teaspoon cinnamon
- ¼ teaspoon kosher salt
Instructions
- Preheat the oven to 350°F. Slice the pears and set them aside. In a small bowl, stir together ½ cup sugar, 2 teaspoons cornstarch, ½ teaspoon ground cinnamon, and ¼ teaspoon kosher salt. Set aside.
- In a large mixing bowl, combine the melted butter and sugar. Stir with a wooden spoon or whisk until smooth. Add the egg and vanilla and whisk smooth.
- Add the flour, oatmeal, cinnamon, and salt. Stir with a fork to combine until crumbs form. Press ⅔ of the crumb mixture into a buttered or parchment-lined 9×13 pan.
- Layer the pears over the crust and then sprinkle the pears with the cinnamon sugar mixture. Top with the remaining crumb topping.
- Bake for 30-34 minutes, until the crust turns golden brown. Serve warm from the oven or let cool completely and slice into servings.
