There’s something incredible about a dessert that looks this fancy and takes less than 15 minutes from start to finish. It feels like unlocking a cheat code. And, Graham Cracker Toffee is exactly that kind of recipe. You know? The kind where people stop mid-bite and ask if you really made it yourself? Just smile, my friend. No one has to know how ridiculously easy it was to make.

Graham Cracker Toffee
People always seem to assume that toffee is complicated. But, this version takes the intimidation out of making it. This graham cracker toffee is a dessert that even the tired, Thursday-night version of me could pull off in my pajamas.
When I first made it, I thought it would just be a quick treat for a potluck I was attending. I never expected the recipe to be so heavily requested. I’ve had people message me that they made it for parties, a homemade gift exchange, and even as a secret treat for their personal stash (me, too!).

So, if you’re worried about trying to make toffee, don’t be! This graham cracker toffee recipe is a great place to start. And, bonus, if you have kids who reject the broken graham crackers (like mine once did), this is a fantastic way to use up the broken pieces. The toffee and chocolate tie it all together, and you’re just going to break them into chunks later, anyways.

It’s hard to believe that something so simple can taste this good. But, these 4-ingredient graham cracker toffee bars deliver on what they promise. The graham crackers soften slightly under the caramel, and the toffee (which is really just butter and brown sugar, melted into submission) seems down into all the little crevices.
The chocolate topping deepens and balances the sweetness of the caramel with just a hint of bitterness from the semi-sweet chips. Also, you can make this dessert with dark chocolate chips. But, only if you’re willing to share with me!

And, that’s all it takes, just four ingredients to make a delightful treat. Everything else is an optional topping. You can add chopped pecans like I did for the batch in these photos. And, I would absolutely recommend a sprinkle of salt flakes when it first comes out of the oven. Kids love it with colorful sprinkles, too!
Every time I post about a recipe like this, someone messages me saying that it reminded them of their grandmother’s candy tin, or holidays long ago. And that’s the real magic, for me. So, I hope that this toffee will bring smiles from my kitchen to yours.

Toffee Recipes
Once you make one toffee recipe, then there’s no going back. It’s a skill you’ll want to flex, now that you’ve gained the confidence to guide butter and brown sugar to the desired result. So, here are a few of my favorite toffee recipes. Some of them call for homemade toffee, while others simplify the process with store-bought candy.
These s’mores squares are a fun variation on this graham cracker toffee. Toasted marshmallows make every seasonal sweet that much better. Gooey chocolate chips and salty bits of toffee are wrapped up in these extra chewy, toffee chocolate chip cookies. I can hear them now, just begging to be dunked in a tall glass of milk.
You won’t regret making my oatmeal lace cookies, either. They are super thin, chewy, and rich with notes of caramel and butter, studded with bits of toffee, and wonderfully crispy edges. No one has been able to resist these cookies yet.
Gooey semi-sweet morsels never met a better match than rich, chewy toffee. So, just mix in pieces of a store-bought toffee bar to my standard chocolate chip cookie dough base, and you’ll be enjoying Heath Bar cookies in no time.

Graham Cracker Toffee
Ingredients
- 8 graham cracker sheets
- ½ cup butter
- ½ cup light brown sugar
- ¾ cup chocolate chips
- ¼ cup chopped pecans OPTIONAL
Instructions
- Preheat the oven to 350°F. Place the graham crackers in a row in a single layer on a parchment-lined baking sheet.
- Combine the butter and brown sugar in a saucepan over medium-high heat. Bring to a boil, reduce to medium heat and simmer for 3-4 minutes, stirring occasionally, until the mixture comes together and the color deepens.
- Pour over the graham crackers and use a spatula to spread the mixture across each cracker if needed.
- Bake for 8 minutes. Remove from the oven and immediately scatter the chocolate chips evenly over the warm crackers. Let the chips sit for a couple of minutes and then use a spatula to spread the melted chocolate across the crackers. Top with pecans, if desired.
- Cool at room temperature or in the refrigerator. When the chocolate has hardened, cut with a sharp knife or break the toffee into pieces. Store in an airtight container at cool room temperature or in the refrigerator.

Google toffee with crackers and several recipes using regular saltine crackers should pop up. You can also use club crackers and i believe I saw one that called for Ritz.
There are so many fun ways to make cracker toffee! Have fun with it.
