Gooey Chocolate Butter Cake

Chocolate Butter Cake

This gooey, chocolatey, buttery dessert is an easy cake to make on a whim. Classic butter cakes start with a box of cake mix and a whole lot of butter. There’s a good reason they’re so delicious!

As the story goes, the original gooey butter cake was created by accident – a very happy accident years ago.

The Chocolate Butter Cake is delicious on its own or served warm with a scoop of ice cream.

As you can probably determine from the name itself, Gooey Butter Cakes tend to be very rich, buttery, and sweet. A small slice is all most people want to eat, and they savor every bite.

I like to serve this with a cup of coffee for the adults or a glass of milk for the kids.

How to Make A Chocolate Butter Cake

  1. Preheat oven to 350º. Lightly grease a 9×13 baking pan with butter.
  2. In a large bowl, combine the cake mix, 1 egg, and ½ cup melted butter. Stir well. Spread mixture into the prepared pan and set aside. Place the cream cheese in a mixing bowl and beat with an electric mixer until smooth.
  3. Add the remaining 2 eggs and the cocoa powder. Slowly pour in the remaining melted butter and the vanilla, continuing to beat until smooth. Add the powdered sugar and continue beating until well combined.
  4. Stir in pecans. Spread the filling over the cake mixture in the pan.
  5. Bake for 40-45 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let the cake cool for at least 10-15 minutes before slicing.

I appreciate the fact there are lots of bakers that want shortcuts and are ok with box mixes with lots of chemicals in them. Can you provide the recipe with a homemade version, please?

It depends on how quickly I think it will be eaten. If it will be consumed within 24 hours or so, I leave it on the counter. Otherwise, I typically refrigerate or freeze leftover portions.
