Funfetti pancakes are colorful, lightly sweet pancakes with a hint of a cake flavor to them. Not only are they pretty to look at, but they’re delicious too!

Funfetti Pancakes

First things first, I am floored by how tasty these pancakes were. I made these for the kids, thinking they’d just be a fun treat for them. I should be embarrassed to admit it (but I’m not!) I wound up eating a ridiculous number of these cute and colorful little pancakes!

I made them silver dollar-sized because I was aiming for cute pancakes, but they’re tasty in any size.

The key to making funfetti pancakes is using the soft cylinder sprinkles (a.k.a. jimmies) rather than the tiny round hard sprinkles (a.k.a. nonpareils). Jimmies will melt nicely into the pancakes as they cook.

I bought these rainbow jimmies for these pancakes, but any soft sprinkle that tastes good on its own will work nicely here. I like the jimmies that melt into the pancakes but don’t bleed and turn the batter muddy looking.

I was sharing this recipe with a friend, knowing her kids would love them as well. She began telling me their latest pancake fiasco. Her kids are just starting to cook more independently and her daughter mistakenly put 6 tablespoons of salt in the pancake batter instead of sugar.

While they scooped out as much of the salt as they could, she knew they had not likely removed enough. So they increased the batches and now had a quadruple batch of pancakes on their hands, but it still tasted salty.

A quick google search found that fat will help cut a salty flavor. They added a bit more sugar and a cup of vanilla yogurt and it all worked out. That’s a great tip to keep in mind, especially when cooking with kids, and a backup plan is needed.

Sprinkle Pancakes

If you make pancakes often, nothing beats a great electric griddle for streamlining the cooking process. A few years ago, when my 15-year-old griddle finally died, I tested every single griddle I could get my hands on. When I finally tried this extra large electric griddle, I knew I’d found THE ONE. It’s a little on the spendy side, but I am telling you now, it beats all the others hands-down.

This nylon flexible turner is a pancake-making must-have, as is a dough whisk. If you aren’t familiar with the awesomeness that is a dough whisk for pancakes and waffles, you are missing out. It’s a crazy-looking tool, but it stirs the batter just enough without overmixing it.

I’ve tried pretty much all of the nifty pancake-pouring gadgets out there, and I stand by a good old measuring cup as the easiest way to make pancakes. I use the ¼ or ⅓ cup sizes for most pancake making – this set that I use every day will allow you to improvise for all kinds of sizes.

When making standard-size 4-inch pancakes, the large scoop in this set of cookie scoops is my favorite way to dispense the batter. The medium scoop works perfectly for smaller-sized pancakes.

Chocolate Funfetti Pancakes with whipped cream and syrup

If you have chocolate sprinkles on hand as well, they make a terrific option for chocolate funfetti pancakes.

Funfetti Mini Pancakes

Ingredients 

  • all-purpose flour
  • baking powder
  • sugar
  • kosher salt
  • milk
  • eggs
  • butter
  • rainbow sprinkles

Pancakes with Sprinkles

  1. Whisk together the flour, baking powder, sugar, and salt. Set aside. Add the milk and the eggs, and whisk to combine.
  2. Add the melted butter. Whisk once more and then stir in the sprinkles. Let the batter rest while the griddle or pan heats.
  3. Heat a flat-bottom nonstick skillet or electric griddle over medium heat. Butter the skillet or griddle lightly and then pour about 3 tablespoons of batter onto the griddle for each pancake.
  4. Let cook undisturbed until they begin to bubble on top and are lightly browned on the bottom. Flip and cook the second side just until golden brown. Serve warm with the toppings of your choice.

Notes

FREEZER MEAL: Let the pancakes cool completely, before storing them in an airtight zipclose bag. Reheat the frozen pancakes in the microwave. I frequently triple this recipe for my family, so that we’ll have plenty in the freezer for easy breakfasts.
