Garlic Parmesan Chicken Pasta

For years, I never understood how easy it could be to make your own sauces – instead of buying them in jars. It felt like magic when someone produced something like this in the kitchen. But, it is surprisingly easy to make something so good you’ll want to eat it again and again.

This is the kind of meal that I love bringing to the table. Warm and hearty, garlic chicken parmesan pasta makes a normal weeknight dinner something to look forward to. And, best of all, you can have it on the table in just 30 minutes.

Creamy Lemon Garlic Pasta

I adore lemon. There’s nothing quite like it that will bring such a bright and tangy flavor to lift and brighten the richer ingredients in a dish. Garlic, on the other hand, offers a deep, aromatic warmth that’s unmistakably savory.

When they come together in this creamy lemon garlic pasta, the result is heavenly. It is both savory and rich, without becoming heavy.

Start by placing a large pot of water over high heat. Bring to a boil, then add 2 tablespoons of salt and the pasta. Cook according to package directions. Prior to draining, reserve 1 cup of the pasta water. Don’t rinse the cooked pasta.

Warm the olive oil in a Dutch oven or deep-sided skillet over medium-high heat. Add the chicken, toss to coat, and sprinkle generously with salt and pepper.

Cook the chicken for 4-5 minutes until cooked through. (If you are using chicken breasts, watch closely and adjust cooking time as needed.) When the chicken is done cooking, transfer to a bowl and set aside.

In the same pot or pan used for the chicken, melt the butter and add the garlic. Cook until fragrant, then add the cream. Bring to a simmer over medium to medium-low heat. Add the lemon juice and lemon zest and whisk to combine.

Continue cooking for 2-3 minutes, until slightly thickened. Add the Parmesan cheese and stir to melt. Add the pasta, and the peas if desired. Toss to coat.

If the pasta appears dry, add a splash or two of the reserved pasta water. Taste and adjust the salt and pepper, if desired. Just before serving, stir the garlic chicken pasta and sprinkle with parsley. Top with extra Parmesan, if desired.
