Soft and chewy White Chocolate Lemon Cookies are studded with white chocolate chips and lightly flavored with lemon. Sweet and tart are the best of friends when it comes to baked goods.
Lemon White Chocolate Cookies
Lemons remind me of summertime. I think it is because summertime was the only time of the year that we had lemonade growing up. It was always on a super hot day after we had been working outside.
Drinking that first sip from a tall glass of Mint Lemonade or Honey Peach Lemonade was so refreshing in the middle of a warm afternoon.
At the time, I was determined to do my best to forget the parts of my childhood that were full of sun and hard work. But, nostalgia is hard to beat. I have such sweet memories of those days, now.
So with summertime and summer fruit flavors on my mind, I took this basic cookie recipe and brightened it up for summer.
White chocolate is fabulous in combination with lemon. The tart citrus and sweet creaminess work so well together. I did a white chocolate drizzle on top for fun, but feel free to skip this step if you’d like to keep it simpler.
White Chocolate Lemon Cookies
Start by creaming the butter and sugars together in a large mixing bowl. Then, beat in the egg and vanilla, and stir in the lemon zest.
In a separate bowl, combine the dry ingredients, then mix it into the butter and egg mixture until fully incorporated. Last, add the white chocolate chips. Then, form the dough into one inch balls and chill in the refrigerator for 2 hours.
Preheat oven to 350°F. Place cookies on baking sheet and bake until edges are lightly brown. Remove from the oven and cool on the baking sheet for 5 minutes. Transfer to a wire rack and cool completely.

I made these cookies this week for Christmas, and while they are incredibly delicious, they don’t look like the photo. They spread out, and have crispy edges. That being said, out of the five different cookies I have made thus far, these are my favourite! Thanks for the recipe.
