My family went a little crazy over this recipe for stuffed French bread. We’re big fans of recipes with French bread and we’ve probably made French Bread Pizza at least a dozen times in the past year.

And French toast breakfast casseroles are always a win with my crew of teenagers. In the summer, peaches and cream or blueberry lemon baked French toast will make everyone smile.

In the winter, Pecan Praline French Toast disappears about as quickly as I can serve it, I’ve never had a bite left over. I usually scramble some eggs or cook some bacon to go with it, just to round out the meal with some extra protein.

We love a hearty breakfast, so this sausage-filled breakfast loaf earned unanimous thumbs up around our table. I suspect that the stuffed French bread will reheat quite well in the oven or toaster oven, but since we devoured every bite when I made it, I haven’t had a chance to test that yet.

Sausage Stuffed Bread

You’ll need the following ingredients to make this recipe:

  • French bread
  • breakfast sausage
  • onion, finely chopped
  • red bell pepper
  • green bell pepper
  • cheddar cheese
  • eggs
  • milk
  • Italian parsley

French Bread Breakfast

Want a great new make-ahead breakfast? The filling for this stuffed French bread can be prepared in advance for a super easy-to-assemble meal.

Place the sausage and bread chunks in an airtight container and refrigerate until needed. Whisk together the eggs and milk in a separate airtight container and refrigerate as well.

Wrap the hollowed-out halves of bread in foil and leave them on the counter overnight. When ready to assemble and bake, follow the recipe directions.

Stuffed French Bread Recipe

Preheat the oven to 350°F. Slice the bread in half lengthwise and carefully hollow it out, leaving about an inch of thickness for the bread crust.

Cut or tear the removed pieces of bread into roughly 1-inch pieces and place them in a large bowl.

In a large skillet over medium-high heat, cook and crumble the sausage. When it is about halfway down cooking, add the onions and bell peppers and continue cooking until the vegetables are tender.

Add the sausage mixture to the bowl with the bread chunks. In a small bowl, whisk together the eggs and the milk. Pour the eggs over the sausage and bread and add the cheese. Stir to combine.

Fill the hollowed-out halves of bread with the sausage mixture. Bake for 28-34 minutes, until the eggs have set and the loaves are golden brown.

Remove from the oven and let rest 5 minutes before slicing and serving warm. Sprinkle with parsley, if desired.
