Super easy, no-bake cookies with chewy oatmeal and all the Cookie Butter flavor you could ever want.
Cookie Butter! Have you tried the stuff? The first jar I ever had, I ate completely with a spoon while snacking!
If you have never had it, you should walk out to your car, find the nearest Trader Joe’s and pick up yourself a jar (or maybe a case!).
Until last year, I lived where the nearest Trader Joe’s was probably 3 hours away (probably why I didn’t discover this treasure sooner), and was I missing out!
After you pick yourself up a jar, you’ll want to make these cookies; they are easy, quick, and one of my favorite things to do with cookie butter.
No Bake Cookie Butter Cookies
These are the equivalent to the chocolate peanut butter no-bake cookies everyone made as a child, so you know they are easy.
They start with butter, milk and vanilla in a pan on the stove. Bring the mixture to a boil and stir in the oatmeal and cookie butter.
Drop by spoonfuls onto wax paper and, voila, cookies! They should cool completely before you eat them, but I dare you to let them alone that long!

Hi Julie, It is crushed up Speculoos cookies and is available at Trader Joe’s or I think you can get it on Amazon as well. It store well like peanut butter, right on the cupboard shelf.

Cookie butter is sold specifically at Trader Joes. It’s basically crushed speculoos cookies. It’s very similar to Biscoff spread available at other super markets.

I followed the directions exactly and mine look nothing like this. They are darker and don’t hold the shape of a cookie. Tastes good, so i wish it worked. Any suggestions?

Hi Katie! I’m guessing that you boiled the mixture to long. I would just barely bring it to a boil, before removing it from the heat and adding the oats. Boiling it, even for a few seconds will cause the mixture to crystallize when it cools and the cookies may fall apart.

Agreed! I love cookie butter, and on its own it is sweet enough, but this recipe seems to need some sugar to add some sweet texture and hold it together like traditional no-bake cookies. Without it these cookies were pretty unremarkable.
