Creamy, fluffy peanut butter mousse (and this chocolate mousse too!) are no-bake summer desserts that get made frequently. This is the perfect after-dinner treat!
Place 1 cup of cream in a mixing bowl and beat with an electric mixer until firm peaks form, about 2-3 minutes. Transfer the whipped cream to a small bowl and set aside.
Combine the cream cheese, peanut butter, and vanilla in the same mixing bowl used for whipped cream. Beat until smooth, about 2 minutes. Add the powdered sugar and cornstarch and beat again, for about 1 minute.
Slowly add the remaining ¼ cup of cream while beating until smooth and creamy, about 30 seconds. Use a spatula to gently stir in the reserved whipped cream until combined.
Scoop the mousse into individual cups or a large serving dish. Refrigerate until ready to serve. Top with sliced bananas, hot fudge, crushed cookies, or whipped cream, if desired before serving.
Notes
Make your life easier when measuring peanut butter by greasing measuring cups with butter (or spray with nonstick spray) before measuring. The peanut butter will slide right out.
