Easy Weeknight Crockpot Meals

When I say that it was an unexpected success the first time I tried cooking ham, green beans, and potatoes in the crockpot, I can’t emphasize that enough. I honestly didn’t expect a whole lot more than an okay way to use up some leftover ham the first time I tried this combination in the crockpot.

But, the flavors were superb! It is hearty comfort food that isn’t heavy with cheese or oils. It’s as simple as can be and my whole family raved about that dinner.

Slow Cooker Sausage and Potatoes

Cooking sausage and potatoes together in the slow cooker turned out to be a very good call because my entire family gave this meal another two thumbs up. After trying this cooking method with some leftover ham a while back, I immediately decided that I’d be making it again with Polish sausage or kielbasa just as soon as possible.

I’ve already made this a couple more times since I first shot these photos, and the odds are good that it’s going to be on the meal plan again soon.

Slow Cooker Kielbasa

Slow cookers or crockpots are an appliance of which I have more than one. If you are an avid slow cooker user like I am, you might understand the need for more than one. So, let’s talk about my favorites:

First up is this 6-quart slow cooker that has a locking lid. These crockpots are fantastic for transporting foods. Mine has gone everywhere from church potlucks to barbecues, game nights to Thanksgiving dinner. However, fair warning, these slow cookers run crazy hot. Low is closer to a boil than a simmer, the warm setting actually simmers. So trust me when I say HIGH is high.

My everyday slow cooker is this 8-quart Crockpot. It’s my go-to appliance for cooking large roasts and big batches of chili. Fun fact: did you know that a full 4-quart cooker, actually cooks more slowly than a half-full 8-quart cooker?

For just cooking a few pounds of chicken to shred for enchiladas or other smaller recipes, this 3-quart version is perfect.

If you aren’t a fan of the idea of keeping more than one slow cooker in the house, these CrockPockets are a game-changer when it comes to preparing and holding multiple dishes at the same time. They slide into a standard 6-quart crockpot, dividing it into two sections that are perfect for serving different side dishes or keeping taco fillings warm for parties.

Green Beans Potatoes and Sausage

While the green beans might technically be considered optional, they are my favorite part of this recipe. They soften beautifully and absorb so much flavor from the sausage and potatoes as they cook.

And lastly, I often double the sausage in this recipe. If you have a family of meat lovers, like I do, feel free to multiply it as desired.

Crockpot Sausage and Potatoes

You’ll need the following ingredients for the recipe:

  • red potatoes
  • yellow onion
  • olive oil
  • salt, black pepper, garlic, paprika
  • smoked sausage or kielbasa
  • fresh green beans (OPTIONAL)

Place the potatoes and onions in the crockpot and drizzle with oil. Sprinkle generously with salt, pepper, garlic, and paprika. Toss to coat.

Add the kielbasa and stir to mix throughout. Place the green beans over the potatoes and sausage. Cover with the lid and cook on LOW for 3-4 hours.

Uncover and stir. Continue cooking, as needed, until the green beans and potatoes are fork-tender.

Kielbasa Recipes with Potatoes

Tender potatoes, fresh cabbage, and salty kielbasa are about all you need to make this quick and easy flavor-filled Kielbasa Cabbage Potato Skillet. There is never a bite left over when I make this and my kids ask for it often.

One pan, easy meals are the key to dinnertime at our house, and these roasted brats with vegetables fit that bill nicely.

Roasted potatoes and kielbasa make for an amazing one-pan meal with just a few seasonings. While tender sweet potatoes, crisp bell peppers, sweet onions, and spicy sausage are roasted together in this simple and flavorful meal that my family just can’t get enough of lately.

Bite-size chunks of potato, kielbasa, and broccoli are roasted together for yet another super easy sheet pan meal that the whole family loves.

Ingredients 

  • pounds red potatoes cut into 1-1½ inch pieces
  • 1 medium yellow onion cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon granulated garlic or garlic powder
  • ½ teaspoon smoked or regular paprika
  • 14 ounces smoked sausage or kielbasa cut into 1 inch pieces
  • 1 pound fresh green beans rinsed and trimmed, OPTIONAL

Instructions

  • Place the potatoes and onions in the crockpot and drizzle with oil. Sprinkle generously with salt, pepper, garlic, and paprika. Toss to coat. Add the kielbasa and stir to mix throughout.
  • Place the green beans over the potatoes and sausage. Cover with lid and cook on LOW for 3-4 hours.
  • Uncover and stir. Continue cooking, as needed, until the green beans and potatoes are fork-tender.

    Does this recipe get dry due to not having any liquids added to it? I’m using fresh green beans, so I’m worried it will all just burn in the crock pot.

      This recipe actually works well without adding liquids. I’ve tried it both with and without adding chicken broth while cooking. If you’re leery of the heat or if your crockpot runs especially hot, you can add a cup or two of broth. However, I don’t find it to be necessary.

      This should double fine. You might need an extra hour or so of cooking time, watch the potatoes to determine doneness.
