Easy Banana Pudding Recipe
To make the meringue, you’ll start by beating the egg whites and salt until frothy. Add 1 tablespoon of sugar at a time and vanilla, and beat until the meringue is stiff. Set aside.
Preheat the oven to 350°F. Combine the milk and the pudding mix in a mixing bowl and beat with a whisk for 2-3 minutes. You can also use an electric mixer with the whisk attachment. Pudding should be soft-set in less than 5 minutes.
Arrange the wagers, sliced bananas, and pudding in layers in a 2-quart dish, ending with a layer of pudding on top. This will make three layers.
Scoop the meringue gently over the top and gently spread it out, leaving plenty of waves in the top. Bake just until lightly browned, about 12-15 minutes.
Remove from the oven and let cool for at least half an hour before tucking it into the refrigerator until ready to serve.
