Ingredients

Meringue

  • 2 egg whites room temperature
  • tsp kosher salt
  • 4 tbsp sugar
  • ¼ tsp vanilla extract

Banana Pudding

  • 1 6 oz box instant vanilla pudding
  • cups milk
  • 1 7¼ oz box vanilla wafers
  • 4 medium bananas sliced

Instructions

Meringue

  • Beat the egg whites and salt until frothy. Add 1 tablespoon of sugar at a time and vanilla, and beat until the meringue is stiff. Set aside

Banana Pudding

  • Preheat the oven to 350°F. Combine the milk and the pudding mix in a mixing bowl and beat with a whisk for 2-3 minutes. You can also use an electric mixer with the whisk attachment. Pudding should be soft-set in less than 5 minutes.
  • Arrange the wagers, sliced bananas, and pudding in layers in a 2-quart dish, ending with a layer of pudding on top. This will make three layers. Spread the meringue gently over the top. Bake just until lightly browned, about 12-15 minutes.
