Meringue
- 2 egg whites room temperature
- ⅛ tsp kosher salt
- 4 tbsp sugar
- ¼ tsp vanilla extract
Banana Pudding
- 1 6 oz box instant vanilla pudding
- 2¾ cups milk
- 1 7¼ oz box vanilla wafers
- 4 medium bananas sliced

Preheat the oven to 350°F. Combine the milk and the pudding mix in a mixing bowl and beat with a whisk for 2-3 minutes. You can also use an electric mixer with the whisk attachment. Pudding should be soft-set in less than 5 minutes.
Arrange the wagers, sliced bananas, and pudding in layers in a 2-quart dish, ending with a layer of pudding on top. This will make three layers. Spread the meringue gently over the top. Bake just until lightly browned, about 12-15 minutes.
