This simple syrup is absolutely wonderful, loaded with sweet and fruity flavors. And, it comes together so simply and quickly, it’s hard to justify using store bought varieties, once you’ve tried this blueberry simple syrup recipe.

The blueberries and lemon juice add such a bright notes to pancakes. I adore it. And, anyone who has been following the blog knows that I love me some pancakes. So, this blueberry simple syrup was an immediate hit.

The lemon juice in this recipe is absolutely optional. But that said, you’re missing out if you skip it. The citrus pairs so well with blueberries, that in my baking I almost always find a way to combine the two.

If you’re looking for a way to wow your friends and family at the next brunch or get together, you cannot go wrong with a homemade simple syrup like this. I get asked how to make this every time I serve it.

Blueberry Simple Syrup Recipe

You’ll need the following ingredients to make this recipe:

  • fresh or frozen blueberries
  • sugar
  • water
  • fresh lemon juice (OPTIONAL)

How to Make Blueberry Simple Syrup

Start by adding the berries, sugar, and water to a medium saucepan, and bring the mix to a boil.

When the berries have softened and begin to burst, reduce the heat to a simmer.

Continue cooking for 8 to 10 minutes, until the berries have broken down completely and the liquid turns a deep shade of purple. Then, remove the pan from the heat.

Place a fine mesh strainer over a mixing bowl, and pour the blueberry mixture through it.

After straining, discard the strained bits. If desired, add a tiny splash of lemon juice to the strained syrup.

Allow the syrup to cool completely before transferring to a glass jar for storage in the refrigerator. The syrup will keep for several weeks.

Ingredients 

  • 18 ounces fresh or frozen blueberries
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon fresh lemon juice OPTIONAL

Instructions

  • Combine the berries, sugar, and water in a medium saucepan and bring to a boil.
  • When the berries soften and begin to burst, reduce the heat to a simmer and press down gently on the berries with a wooden spoon as they burst. Continue cooking for 8-10 minutes, until the berries have broken down and the liquid turns deep purple.
  • Remove the pan from the heat. Place a fine mesh strainer over a bowl and pour the blueberry mixture through it. After straining, discard the bits of cooked berries in the strainer. Add a tiny bit of lemon juice to the syrup now, if desired.
  • Allow the syrup to cool completely before transferring it to a glass jar for storage in the refrigerator. The syrup will last for several weeks.
