Ingredients
3poundsboneless skinless chicken breasts, thighs, or both
21 .5ouncescondensed cream of chicken soup(This is (2) 10.75 ounce cans.)
6ouncesStove Top Stuffing, chicken flavored(This is one box.)
¼-½cupchicken stock or brothonly as needed
Instructions
Combine the chicken and soup in the crockpot and cook on LOW until the chicken is easily pulled apart. This usually takes about 3-4 hours, depending on the crockpot.
Using tongs or a pair of forks, shred the chicken. Add the stuffing mix to the crockpot and stir to combine. Cover with lid and cook for an additional 20-30 minutes, just until the stuffing has softened and everything is warm.
If the mixture appears dry, add a splash or two of chicken stock before serving. Pile the chicken mixture on hamburger buns to serve.
Notes
The original recipe I was given called for boneless skinless chicken breasts. We're a family of dark meat lovers, so I typically make this with either all dark meat or a combination of both. Feel free to use your favorite when making this recipe.
