Shredded Chicken Sandwiches

With a taste reminiscent of a roasted chicken dinner complete with stuffing, these easy shredded chicken sandwiches are a sure-fire hit!

Ingredients

  • 3 pounds boneless skinless chicken breasts, thighs, or both
  • 21 .5 ounces condensed cream of chicken soup (This is (2) 10.75 ounce cans.)
  • 6 ounces Stove Top Stuffing, chicken flavored (This is one box.)
  • ¼-½ cup chicken stock or broth only as needed

Instructions

  • Combine the chicken and soup in the crockpot and cook on LOW until the chicken is easily pulled apart. This usually takes about 3-4 hours, depending on the crockpot.
  • Using tongs or a pair of forks, shred the chicken. Add the stuffing mix to the crockpot and stir to combine. Cover with lid and cook for an additional 20-30 minutes, just until the stuffing has softened and everything is warm.
  • If the mixture appears dry, add a splash or two of chicken stock before serving. Pile the chicken mixture on hamburger buns to serve.

Notes

The original recipe I was given called for boneless skinless chicken breasts. We're a family of dark meat lovers, so I typically make this with either all dark meat or a combination of both. Feel free to use your favorite when making this recipe.
