Chocolate Covered Potato Chips

As a dedicated fan and vociferous lover of all things sweet and salty, I'm telling you now that chocolate covered potato chips need to be on your must-try list just as soon as possible. I'll bet you can't eat just one!

Ingredients

  • 2 ounces ridged potato chips
  • 3 ounces semi-sweet chocolate chips about ¾ cup
  • 1 teaspoon coconut oil

Instructions

  • Place the chocolate and the oil in a glass bowl and microwave at 50% power for a couple of minutes, stirring every 30 seconds, until melted and smooth.
  • Line a baking sheet with parchment paper. Dip about a third of each chip into the melted chocolate, allowing any excess chocolate to drip off before placing the chocolate coated chips on the parchment paper.
  • Let cool at room temp or in the refrigerator for a faster cooling time. Once set, store in an airtight container in the refrigerator.
