Chocolate Covered Potato Chips
As a dedicated fan and vociferous lover of all things sweet and salty, I'm telling you now that chocolate covered potato chips need to be on your must-try list just as soon as possible. I'll bet you can't eat just one!
- 2 ounces ridged potato chips
- 3 ounces semi-sweet chocolate chips about ¾ cup
- 1 teaspoon coconut oil
Place the chocolate and the oil in a glass bowl and microwave at 50% power for a couple of minutes, stirring every 30 seconds, until melted and smooth.
Line a baking sheet with parchment paper. Dip about a third of each chip into the melted chocolate, allowing any excess chocolate to drip off before placing the chocolate coated chips on the parchment paper.
Let cool at room temp or in the refrigerator for a faster cooling time. Once set, store in an airtight container in the refrigerator.
