- 1½ pounds boneless skinless chicken breasts
- ⅔ cup extra virgin olive oil
- 2 tablespoons dijon mustard
- ½ cup freshly squeezed lemon juice
- 3 garlic cloves minced
- 1 teaspoon kosher salt
- 2 teaspoons oregano
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon freshly ground black pepper
Combine the chicken, olive oil, mustard, lemon juice, garlic, salt, oregano, red pepper flakes, black pepper in a gallon size freezer bag and seal tightly. Turn a few times to ensure all the pieces of chicken are covered and then place in the refrigerator to marinate for at least 8 hours and up to 24 hours.
When ready to cook the chicken, remove it from the refrigerator. Preheat the air fryer to 375°F. Place the chicken in the air fryer in a single layer.
Cook for 15-18 minutes, turning the breasts over halfway through the cooking time. Cook until the chicken breasts reach an internal temperature of 165°F. (Cook chicken thighs to 175°F.)
