Ground Beef Stir Fry
With an easy stir fry sauce made with soy sauce, chili paste, garlic, and ginger, this ground beef stir fry delivers abundant flavors in a one-pan recipe loaded with plenty of vegetables too.
While I typically enjoy this on its own, my family likes to pile their servings over rice with an extra drizzling of soy sauce, or Sriracha for a bit more heat.
Can You Eat Broccoli Stalks?
Yes! You CAN eat the broccoli stalk and it’s delicious! You might be tempted to skip the broccoli rounds, but please try them. They offer a bit of added texture and the boost of broccoli flavor is great too. It is easy as can be and well worth the extra minute or two to slice them.
To make the broccoli rounds, start by cutting the long thick stalk off of the head of broccoli. Then peel the outside of the stalk enough to remove the brown areas. Slice the stalk into thin rounds. That’s all you need to do. Use the rounds the same way you use broccoli florets.

You’ll need the following ingredients to make this recipe:
SAUCE INGREDIENTS
- soy sauce
- beef broth
- chili paste
- garlic cloves
- ginger
- light brown sugar
STIR FRY INGREDIENTS
- sesame oil
- ground beef
- cornstarch
- salt and pepper
- broccoli
- red bell pepper
- yellow onion
Ground Beef and Broccoli Stir Fry
Start by combining the soy sauce, beef broth, chili paste, garlic, ginger, and brown sugar in a small glass bowl or measuring cup. Whisk to combine and set the sauce aside.
Warm the sesame oil in a large skillet over medium-high heat; add the ground beef, and crumble as it browns. (If a significant about of oil or water is released, drain the beef.)
When the beef has almost browned, sprinkle with cornstarch, salt, and pepper. Stir to coat.
Add the bell peppers and onions and continue cooking for 3-4 minutes (the vegetables should begin to soften).
Add the broccoli and pour the sauce into the skillet.
Lower the heat to medium and continue cooking and stirring until the sauce thickens, about 1-2 minutes.
Taste and add more salt and pepper, only if needed. Serve the ground beef stir fry on its own or over rice.
