Creamy chunks of chocolate and crunchy candy canes meet up in perfectly chewy cookies with crisp edges to create these White Chocolate Peppermint Cookies.
When I initially had the idea for these cookies, I wasn’t sure what to expect, but let me tell you that the results went way beyond my hopes. I tasted one cookie and then ate two more in just a few minutes before I managed to get them packaged up to share with friends.
Peppermint White Chocolate Cookies
Oh, how I love a great peppermint dessert! I enjoy peppermint so much that I stock up on candy canes every year just to be sure to have them on hand whenever the craving hits.
These white chocolate peppermint cookies are the ultimate Christmas flavor combination, though truth be told, I’ll happily make them any time of the year. What’s not to love?
Truly hate white chocolate? You can make these cookies with any chocolate that you like! I’ve made them with semi-sweet and dark chocolate too and they’ve been a hit every time.
Extra candy canes on hand? Creamy, lightly sweetened candy cane dip is the perfect addition to a dessert cookie display or holiday snack tray. And for your next movie night, white chocolate peppermint popcorn is a guaranteed win.
White Chocolate Candy Cane Cookies
The candy canes in these cookies will melt a bit into the cookies while retaining the perfect amount of crunch. The combination is everything I want in a Christmas cookie!
Candy cane cookies can go a couple of different ways. The traditional option is a shaped sugar cookie that actually looks like a candy cane. This isn’t that cookie.
This is a chewy chocolate chip cookie with a hint of peppermint in the cookie dough and generous sprinkles of crushed candy cane pieces throughout each bite. I can’t get enough of this cookie combination.
White Chocolate Candy Cane Cookies
You’ll need the following ingredients to make this recipe:
- butter
- light brown sugar
- egg
- vanilla extract
- peppermint extract
- all-purpose flour
- corn starch
- baking powder
- kosher salt
- white chocolate chips
- crushed candy canes or peppermint candies
Preheat oven to 350°F. Combine the butter and sugars and beat with an electric mixer until fluffy. Add the egg and vanilla and beat until smooth.
Add the flour, cornstarch, baking soda, and salt. Beat to combine. Add the white chocolate chips and crushed candy and beat again to mix throughout.
Scoop 2 tablespoons worth of dough (12 per baking sheet) onto a parchment-lined baking sheet and roll into balls with your hands.
Bake for 8-9 minutes JUST until the edges have very lightly browned. The centers should still look soft with a few cracks on top.
Allow the cookies to cool on the baking sheet for 4-5 minutes and then transfer to a wire rack to cool completely. (This cooling rack sees regular use in my kitchen.)
Store tightly covered on the counter for 2-3 days or freeze in an airtight container for several weeks.
