When I first heard that you could use a package of muffin mix to make pancakes, I simply had to try it. That sounded like the perfect way to pull together a lightning-fast “fun aunt” breakfast with my nieces when I don’t have time for a whole lot more than that.
It turns out that these are officially the easiest pancakes in the world. That said, these are not traditional pancakes. Are they tasty? Yes. Are they as easy as can be? Yes. Will I make them again? Absolutely.
When these pancakes are hot off the griddle, they’re fluffy and warm, much like any other pancakes. They’re perfect with a pat of butter and a drizzle of syrup.
Muffin Mix Pancakes
However, when muffin mix pancakes are cold? They’re a pancake that tastes exactly like a muffin, a little bit weirdly exactly like a muffin. It kind of made me laugh at just how different they taste after they’ve cooled.
Fortunately, my kids enjoyed them both hot and cold and said that the leftover pancakes were just like snacking on muffins. So, if you have any muffin mix pancakes leftover, plan on eating them as snacks, not necessarily as a stack of pancakes.

Pancakes from Muffin Mix
You’ll need the following ingredients to make this recipe:
- muffin mix, any flavor
- milk
That is it! There are two-ingredient pancakes that can be made with just about any muffin mix you like.
Can you add an egg? Sure, but it isn’t necessary. You’ll also need to balance that extra liquid with less milk and possibly more pancake mix.
How to Make Pancakes with Muffin Mix
In a small bowl, whisk together the muffin mix and the milk. Let the batter rest while the griddle heats.
Warm a flat-bottom nonstick skillet or electric griddle over medium-low heat. Scoop about 3 tablespoons of batter onto the griddle and allow the pancakes to cook until they begin to bubble on top and they are lightly browned on the bottom, about 2-3 minutes.
Flip them over and cook the second side until golden brown. Serve warm with the toppings of your choice.
