Rosemary Garlic Potatoes

Tempting and versatile than rosemary garlic potatoes are tender roasted potatoes with a crisp garlicky, rosemary crust. They are the ultimate in side dishes!

Ingredients

  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon freshly ground black pepper adjust to taste
  • 1 tablespoon finely minced fresh rosemary
  • 6 cups baby potatoes halved
  • 1 tablespoon finely chopped Italian parsley

Instructions

  • Preheat the oven to 425°F. Combine the oil, garlic, salt, pepper, and rosemary in a mixing bowl. Stir to combine. Add the halved potatoes to the bowl and toss well to thoroughly coat the potatoes with the spice mixture.
  • Spread the potatoes across the baking sheet. Roast for 35-40 minutes, stirring the potatoes and turning them over with a large spatula once halfway through. Remove from the oven and sprinkle generously with parsley before serving.
