Rosemary Garlic Potatoes
Tempting and versatile than rosemary garlic potatoes are tender roasted potatoes with a crisp garlicky, rosemary crust. They are the ultimate in side dishes!

- 2 tablespoons olive oil
- 4 garlic cloves minced
- 1 teaspoon salt adjust to taste
- ½ teaspoon freshly ground black pepper adjust to taste
- 1 tablespoon finely minced fresh rosemary
- 6 cups baby potatoes halved
- 1 tablespoon finely chopped Italian parsley
Preheat the oven to 425°F. Combine the oil, garlic, salt, pepper, and rosemary in a mixing bowl. Stir to combine. Add the halved potatoes to the bowl and toss well to thoroughly coat the potatoes with the spice mixture.
Spread the potatoes across the baking sheet. Roast for 35-40 minutes, stirring the potatoes and turning them over with a large spatula once halfway through. Remove from the oven and sprinkle generously with parsley before serving.
