Ingredients
12peanut butter cookies
6Tablespoonsjam or fruit puree
2cupsstrawberry or vanilla ice cream
Instructions
Spread a tablespoon of jam or fruit puree on the bottom of 6 of the cookies. Place in the freezer for about 20 minutes.
Remove from the freezer and place a scoop of ice cream on top of the jam. (Try this ice cream scoop a kitchen MUST HAVE!) Top with another cookie freeze for 20 minutes.
Notes
You can enjoy these cookies as soon as you put the ice cream on for a slightly softer bite. These cookies can also be stored in an air-tight container in the freezer for up to a week.
