Ingredients
6poundboneless pork shouldercut into 3-4 inch chunks
2.5tablespoonssmoked paprika
1teaspooncayenne pepper
1teaspoonfreshly ground black pepper
2teaspoongarlic powder
1teaspoononion powder
1teaspoondried oregano
1teaspoondried thyme
2teaspoonskosher salt adjust to your preference
¼cupolive oil
Instructions
Place the pork shoulder pieces in a Dutch oven. Combine the paprika, cayenne, black pepper, garlic powder, onion powder, oregano, thyme, and salt in a small bowl. Add the olive oil and stir to form a thick paste. Rub the paste all over the pork shoulder pieces.
Preheat the oven to 450°F. Roast the pork, uncovered, for 30 minutes. Turn the heat down to 250°F and continue to cook, uncovered, for 2-4 hours* until the middle of the roast pieces register 180°F on an internal thermometer.
If there are juices in the bottom of the pot, turn the pieces over a bit to moisten them all around. Serve warm.

* The size of the pork pieces will determine the required cooking time. Check at 2 hours to determine doneness.
