Dutch Oven Pork Roast

Ingredients

  • 6 pound boneless pork shoulder cut into 3-4 inch chunks
  • 2.5 tablespoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 teaspoons kosher salt adjust to your preference
  • ¼ cup olive oil

Instructions

  • Place the pork shoulder pieces in a Dutch oven. Combine the paprika, cayenne, black pepper, garlic powder, onion powder, oregano, thyme, and salt in a small bowl. Add the olive oil and stir to form a thick paste. Rub the paste all over the pork shoulder pieces.
  • Preheat the oven to 450°F. Roast the pork, uncovered, for 30 minutes. Turn the heat down to 250°F and continue to cook, uncovered, for 2-4 hours* until the middle of the roast pieces register 180°F on an internal thermometer.
  • If there are juices in the bottom of the pot, turn the pieces over a bit to moisten them all around. Serve warm.

Notes

* The size of the pork pieces will determine the required cooking time. Check at 2 hours to determine doneness.
