Blueberry Compote
Bursting with the sweet tang of blueberries in every bite, this blueberry compote is one of my favorite ways to top a serving of crepes, a no-bake cheesecake, or a bowl of ice cream.

- 18 ounces fresh blueberries divided
- ½ cup sugar
- 3 tablespoons water
- 2 tablespoons fresh lemon juice
Combine half of the blueberries, sugar, water, and lemon juice in a saucepan over medium heat. Stir continuously while the sugar melts and the mixture comes to a boil.
Reduce the heat to medium-low and continue simmering until the berries are bursting and the mixture is thick and bubbling, about 6-8 minutes. Stir in the remaining berries. Continue cooking, while stirring occasionally, for an additional 3-4 minutes.
Remove from the heat and cool completely before transferring to an airtight container and storing it in the refrigerator.
