Ingredients

  • cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • cup vegetable oil
  • 2 eggs
  • ½ cup white sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2 ripe pears peeled and finely diced, about 1½ cups
  • ½ cup chopped pecans OPTIONAL

Instructions

  • Preheat the oven to 325°F. Grease and flour an 8x5 inch loaf pan or line with parchment paper. In a medium mixing bowl combine flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine and set aside.
  • In a large mixing bowl, whisk together the oil, eggs, sugars, and vanilla. Add the dry ingredients to the wet ingredients and stir until just moistened. Fold in the pears and pecans.
  • Transfer to the prepared pan and bake for one hour and 15 minutes. Cool completely before removing from the pan.
