- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ⅓ cup vegetable oil
- 2 eggs
- ½ cup white sugar
- ½ cup light brown sugar
- 1 teaspoon vanilla extract
- 2 ripe pears peeled and finely diced, about 1½ cups
- ½ cup chopped pecans OPTIONAL
Preheat the oven to 325°F. Grease and flour an 8x5 inch loaf pan or line with parchment paper. In a medium mixing bowl combine flour, baking powder, baking soda, salt, and cinnamon. Whisk to combine and set aside.
In a large mixing bowl, whisk together the oil, eggs, sugars, and vanilla. Add the dry ingredients to the wet ingredients and stir until just moistened. Fold in the pears and pecans.
Transfer to the prepared pan and bake for one hour and 15 minutes. Cool completely before removing from the pan.
