Ingredients
2poundsfrozen meatballs
2cupsspicy barbecue sauceuse your favorite
3bell peppers, any colorscut into 1-inch pieces
220-oz cans pineapple chunks, drained
4green onionsthinly sliced
cooked ricefor serving
Instructions
Add the meatballs and barbecue sauce to the crock-pot. Stir to coat. Cook on low for 4 hours, or on high for 2 hours.
When the meatballs are warm, add the peppers and pineapple to the crock-pot. Stir to combine. Cook an additional 30-60 minutes until the peppers are tender.
Serve over rice and sprinkle with green onions.
Notes
Yes, you can combine all of the ingredients in the crock-pot at the beginning of the cooking process. My preference is to add the peppers and pineapple at the end though, so they retain their color and crispness.
