Ingredients

  • 2 pounds frozen meatballs
  • 2 cups spicy barbecue sauce use your favorite
  • 3 bell peppers, any colors cut into 1-inch pieces
  • 2 20-oz cans pineapple chunks, drained
  • 4 green onions thinly sliced
  • cooked rice for serving

Instructions

  • Add the meatballs and barbecue sauce to the crock-pot. Stir to coat. Cook on low for 4 hours, or on high for 2 hours.
  • When the meatballs are warm, add the peppers and pineapple to the crock-pot. Stir to combine. Cook an additional 30-60 minutes until the peppers are tender.
  • Serve over rice and sprinkle with green onions.

Notes

Yes, you can combine all of the ingredients in the crock-pot at the beginning of the cooking process. My preference is to add the peppers and pineapple at the end though, so they retain their color and crispness.
