Peaches and Cream Bars

Peaches and Cream Bars start with a brown sugar crumb crust filled with fresh peaches and creamy custard. These bars are everything I love about peach season tucked into a wonderfully easy-to-make dessert.

Ingredients

For the crust and topping

  • 2 cups flour
  • 1 cup quick cooking oats
  • cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • cups cold butter

For the peach filling

  • 1 cup granulated sugar
  • 4 ounces cream cheese softened
  • 2 eggs
  • ¼ cup milk
  • ¼ cup flour
  • ½ teaspoon vanilla
  • ½ teaspoon salt
  • 4 - 5 cups ripe peaches peeled and diced

Crust Instructions

  • Preheat the oven to 350°F. In a medium mixing bowl, combine the flour, oats, brown sugar, cinnamon, and nutmeg. Cut in the butter with a pastry blender until pea-sized crumbs are formed.
  • Reserve 2 cups of the crumb mixture for the topping and press the remainder into a greased 9 x 13 inch baking pan. Bake for 10 minutes in the preheated oven.

Filling Instructions

  • While the crust is baking, cream together the sugar and cream cheese until smooth. Add the eggs, milk, flour, vanilla, and salt and beat to combine. Gently stir in the peaches.
  • Remove the crust from the oven and gently pour the peach filling onto the crust. Top with the remaining crumb mixture.
  • Bake for 32-35 minutes or until filling is set. Let cool before slicing.
