S'mores Rice Krispie Treats

S'mores Rice Krispie Treats are filled with crushed graham crackers, rice Krispies, melted marshmallows, and toasted marshmallows before being topped with melted milk chocolate and a final layer of toasted marshmallows.

  • cups broken and lightly crushed graham crackers 9 full crackers worth
  • 6 cups rice krispies
  • 10 ounces mini marshmallows
  • 10 ounces large marshmallows
  • 6 tablespoons butter
  • 5 standard size (1.55 oz) Hershey bars


  • Preheat the oven to Broil. Grease a 9x13 baking pan with butter. Line a large baking sheet with foil and grease it well.
  • Mix the crushed graham crackers and rice Krispies in a large bowl and set aside. Spread 1/2 of the bag of mini marshmallows on the greased foil. Place under the broiler for a minute or two or until toasted. Watch them closely so they don't burn. Remove from the oven and set aside.
  • In a large saucepan, melt the butter and add the bag of large marshmallows. Stir over low heat until melted. Add the melted marshmallows and the toasted marshmallows (a greased spatula makes all this easier) to the bowl of rice Krispies and graham cracker crackers. Stir until well combined.
  • Lightly press the mixture into the greased 9 x 13 pan. Immediately top with the Hershey bar pieces or chocolate chips. Pop the pan into the warm oven for a moment (just long enough) to soften the chocolate. Remove from the oven and spread the chocolate with a knife.
  • Top the bars with the remaining half a bag of mini marshmallows and again place the whole pan under the broiler for a minute or so, just until toasted. Watch closely!
  • Let cool completely before cutting into bars. I recommend greasing a sharp knife with butter and then washing and re-greasing the knife as needed while slicing the sticky bars.


1 1/2 cups semi-sweet chocolate chips can be substituted for the Hershey bars in this recipe.
