White Chocolate Lemon Cookies

Ingredients

  • cups butter softened
  • ¾ cup white sugar
  • ¼ cup light brown sugar
  • 1 egg room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • cups white chocolate chips

Instructions

  • Cream butter and sugars together in a large mixing bowl. Beat in the egg and vanilla. Stir in lemon zest.
  • In a separate bowl combine flour, cornstarch, baking soda, and salt. Add to butter mixture. When combined add white chocolate chips.
  • Form into balls about an inch or slightly more in diameter. Chill in the refrigerator for at least 2 hours
  • Preheat oven to 350°F. Place cookies on baking sheet. Bake for 8 to 11 minutes until edges are lightly brown. Remove from the oven and cool on the baking sheet for 5 minutes. Transfer to a wire rack and cool completely.
