- 1½ cups butter softened
- ¾ cup white sugar
- ¼ cup light brown sugar
- 1 egg room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons lemon zest
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1½ cups white chocolate chips
Cream butter and sugars together in a large mixing bowl. Beat in the egg and vanilla. Stir in lemon zest.
In a separate bowl combine flour, cornstarch, baking soda, and salt. Add to butter mixture. When combined add white chocolate chips.
Form into balls about an inch or slightly more in diameter. Chill in the refrigerator for at least 2 hours
Preheat oven to 350°F. Place cookies on baking sheet. Bake for 8 to 11 minutes until edges are lightly brown. Remove from the oven and cool on the baking sheet for 5 minutes. Transfer to a wire rack and cool completely.
