Ingredients

For the apple cookies

  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup 2 sticks butter, unsalted, at room temperature
  • 1/2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups quick cooking oats
  • 2 cups apple peeled and chopped

For the cream cheese frosting

  • 1 4 oz package cream cheese, softened
  • ¼ cup 1/2 stick butter, unsalted, softened
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract

Instructions

Cookie Instructions

  • Preheat oven to 350 degrees. Line cookie sheets with parchment paper or silicone baking mat. In a small bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg and set aside.
  • In a large bowl, cream the butter and sugar until fluffy and light, about 2 minutes.
Add eggs, one at a time, mixing well after each addition. Add vanilla, mix well.
  • Gradually add the dry ingredients, and mix just until incorporated. Stir in oatmeal. Peel and chop apple, stir into batter.
  • Using a cookie dough scoop divide dough. You may need to roll in your hands to form a ball. Slightly flatten before baking if you are going to frost the cookies.
  • Bake about 12-15 minutes or until golden brown around the edges. Cool completely on wire rack.

Frosting Instructions

  • While the cookies are baking, beat the butter in a large bowl until smooth. Add cream cheese and vanilla, and beat again until smooth. Gradually add powdered sugar and beat until smooth.
  • After the cookies are fully cooled, frost with cream cheese frosting, sprinkle with cinnamon sugar, if desired. Store in refrigerator in an airtight container
