A traditional oatmeal cookie made into a fall favorite, these Apple Oatmeal Cookies are topped with a cream cheese frosting. They are soft, chewy, and full of apple flavor.

Ingredients
For the apple cookies
2 1/2cupsflour
1teaspoonbaking soda
1/2teaspoonsalt
2teaspoonscinnamon
1teaspoonground nutmeg
1cup2 sticks butter, unsalted, at room temperature
1/2cupsbrown sugar
2eggs
2teaspoonsvanilla
2 1/2cupsquick cooking oats
2cupsapplepeeled and chopped
For the cream cheese frosting
14 oz package cream cheese, softened
¼cup1/2 stick butter, unsalted, softened
2cupspowdered sugarsifted
1teaspoonvanilla extract

Preheat oven to 350 degrees. Line cookie sheets with parchment paper or silicone baking mat. In a small bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg and set aside.
In a large bowl, cream the butter and sugar until fluffy and light, about 2 minutes. Add eggs, one at a time, mixing well after each addition. Add vanilla, mix well.
Gradually add the dry ingredients, and mix just until incorporated. Stir in oatmeal. Peel and chop apple, stir into batter.
Using a cookie dough scoop divide dough. You may need to roll in your hands to form a ball. Slightly flatten before baking if you are going to frost the cookies.
Bake about 12-15 minutes or until golden brown around the edges. Cool completely on wire rack.
Frosting Instructions
While the cookies are baking, beat the butter in a large bowl until smooth. Add cream cheese and vanilla, and beat again until smooth. Gradually add powdered sugar and beat until smooth.
After the cookies are fully cooled, frost with cream cheese frosting, sprinkle with cinnamon sugar, if desired. Store in refrigerator in an airtight container
