White Chocolate Peppermint Cookies

Ingredients

  • ¾ cup butter room temperature
  • cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • 2 cups all purpose flour
  • 1 tablespoon corn starch
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • cups white chocolate chips
  • ¼ cup crushed candy canes or peppermint candies

Instructions

  • Preheat oven to 350°F. Combine the butter and sugars and beat with an electric mixer until fluffy. Add the egg and vanilla and beat until smooth.
  • Add the flour, cornstarch, baking soda, and salt. Beat to combine. Add the white chocolate chips and crushed candy and beat again to mix throughout.
  • Scoop 2 tablespoons worth of dough (12 per baking sheet) onto a parchment-lined baking sheet and roll into balls with your hands.
  • Bake for 8-9 minutes JUST until the edges have very lightly browned. The centers should still look soft with a few cracks on top. Allow the cookies to cool on the baking sheet for 4-5 minutes and then transfer to a wire rack to cool completely. (This cooling rack sees regular use in my kitchen.)
  • Store tightly covered on the counter for 2-3 days or freeze in an airtight container for several weeks.
