Mint Chocolate Chip Cookies
A classic chocolate chip cookie recipe is given an upgrade. These mint chocolate chip cookies start with a thick and chewy cookie base and are filled with chocolate chips and mint chips.

- 1½ cups butter softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs room temperature
- 1 tablespoon vanilla
- 4 cups all purpose flour
- 1½ tablespoon cornstarch
- 2 teaspoons baking soda
- 1 tsp salt
- 1½ cups mint chips
- 1½ cups chocolate chips
Cream butter and sugars together. Beat in egg and vanilla.
In a separate bowl combine flour, cornstarch, baking soda and salt. Add to wet ingredients.
Stir until well combined. Stir in mint chips and chocolate chips. Form into balls about an inch or slightly more in diameter.
Chill for at least 2 hrs or a couple days if you don't want to eat them right away.
Preheat oven to 350°F. Bake for 8-11 minutes until edges are lightly brown. Do not over-bake. The centers may still look doughy.
Allow to cool on the cookie sheet for 5 minutes and then cool completely on wire rack.
