Ingredients

  • 1 cup crunchy peanut butter
  • ¼ cup butter softened
  • 1 cup powdered sugar
  • cups corn flakes cereal
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons refined coconut oil or vegetable shortening

Instructions

  • In a large bowl, combine the peanut butter, butter, and powdered sugar. Beat with an electric mixer until smooth. Stir in cereal until well combined.
  • Scoop into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  • In a large microwave-safe bowl, combine the chocolate chips and coconut oil or shortening. Heat for 1 minute and stir, then continue heating for 20-30 seconds and stirring after each interval until chocolate is almost melted. Stir until completely smooth.
  • One at a time, insert a toothpick into a chilled peanut butter ball and dip it into the melted chocolate. Place on the parchment-lined baking sheet until firm.
  • Store in an airtight container in the refrigerator for several days or in the freezer for several weeks.
