- 1 pound ground beef
- 15 ounces canned black beans drained and rinsed OPTIONAL
- 6 tablespoons taco seasoning divided
- 8 ounces cream cheese room temperature
- 2 cups sour cream
- 2 tablespoons Cholula hot sauce
- 2 cups romaine lettuce sliced into thin shreds and chopped small
- 1 cup freshly shredded cheddar cheese
- 3 medium tomatoes seeded and chopped into ½-inch pieces, about 2 cups
- 1 large green bell pepper finely chopped into ¼-inch pieces, about 1 ½ cups
- 2.5 ounces canned sliced black olives drained
- 4 green onions sliced thin, about ¼ cup
In a large skillet, cook and crumble the ground beef over medium heat. Drain, if needed. Add black beans, if desired. Sprinkle the beef with 3 tablespoons of taco seasoning and add 3 tablespoons of water. Cook an additional minute or two, until well-seasoned and slightly saucy. Allow the meat to cool while preparing the rest of the recipe.
In a large mixing bowl, combine the cream cheese with the remaining 3 tablespoons of taco seasoning and beat with an electric mixer until mixed throughout. Add the sour cream and beat again to combine.
Spread the sour cream mixture in a 9x13 baking dish and top with the ground beef. Top the beef with layers of lettuce, cheese, tomatoes, bell pepper, olives, and green onions.
