Ingredients

Cherry Filling Ingredients

  • 12 ounces frozen dark sweet cherries
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • ¼ teaspoon kosher salt
  • ½ teaspoon almond extract
  • 1 tablespoons fresh lemon juice

Crisp Topping Ingredients

  • ¾ cup old-fashioned oats
  • ¾ cup flour
  • cup light brown sugar
  • ½ cup butter melted
  • ¼ cup sliced almonds optional

Instructions

  • Preheat the oven to 400°. Grease an 8×8 pan with butter. Place the cherries in a medium-sized bowl and sprinkle with the sugar, cornstarch, and salt. Stir to coat the fruit and drizzle with almond extract and lemon juice. Set aside while assembling the topping.
  • In a separate mixing bowl, stir together the oats, flour, brown sugar, and almonds, if desired. Add the butter and stir with a fork until crumbs form. Transfer the cherry mixture into the greased pan and sprinkle the oat mixture on top of the fruit.
  • Bake for 25-28 minutes, until the crisp topping, has browned and the fruit liquids are bubbling. Serve warm with vanilla ice cream or whipped cream.
