Applesauce Pancakes

Warmly spiced applesauce pancakes are a delicious and fragrant breakfast treat perfect with honey butter or vanilla pancake sauce.

Ingredients

  • cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons light brown sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 tablespoons butter melted
  • cup applesauce unsweetened

Instructions

  • Whisk together the flour, baking powder, sugar, cinnamon, and salt. Set aside. Add the milk, vanilla, and eggs. Stir to combine. Add the melted butter and applesauce. Stir once more and then let the batter rest while the griddle or pan heats.
  • Heat a flat-bottom nonstick skillet or electric griddle over medium heat. Butter the skillet or griddle lightly (this is not optional for these pancakes) and then pour about 1/4 cup of batter onto the griddle for each pancake.
  • Let cook undisturbed until they begin to bubble on top and they are lightly browned on the bottom. Flip and cook second side just until golden brown. Serve warm with the toppings of your choice.

Notes

I found that these pancakes cook best with optimal results when the griddle is lightly oiled before cooking. I drizzle about a tablespoon of oil onto the griddle and spread it across the surface quickly with a pastry brush. Butter may be used as well, watch closely and take care that it doesn't burn.
