In reply to Betty. Yes, you can use frozen rhubarb. I like to thaw it first and then pat it slightly dry before adding it to the recipe.

Made it with the last 2C of my rhubarb & 2C fresh blueberries and got rave reviews from the neighbors. I’m out if rhubarb but have a lot of frozen berries. Any reason my frozen blueberries, raspberries, strawberries wouldn’t work?

In reply to Darcy Leerhoff. I refrigerate the bars until ready to serve. If you have access to a fridge, that is ideal since they are a custard base.
