Hey Jen, thank you for taking the time to comment on the recipe. It is hard to guess what went wrong here without being in the kitchen with you, but it sound like you simply followed the recipe as written – and yikes, that does not sound fun at all. (I hate being disappointed with a recipe I am trying for the first time!) Were you stirring in the tiny diced bananas? or slicing them thinly? Neither option should make a huge difference, but I’m curious. I’m going to make a batch of these pancakes this week and see if there is an issue with the way the recipe is written. I remember really enjoying these, but it’s possible something was accidentally changed when the recipe was entered into the post here.
