I think sour cherries will work fine, the cherries in the cake might just be a bit more tart. I wouldn’t adjust the sugar for that.

I’m sorry to hear that the cake wasn’t a hit. How long did you beat it for? And why longer than recommended? Were you using fresh or frozen cherries? Did you include any juices? All of that aside, this is the second comment that the cake was heavy though, so I’ll add it to my list of recipes to re-test. Thanks for the feedback, Kate.

And didn’t rise much and I beat it for more than the required time
All in all not a great recipe annoyingly as I rarely make cakes and had alot of cherries to use .

I’m sorry to hear that it wasn’t a win for you. Did you by chance change any of the ingredients? It isn’t a light and fluffy cake, but I’ve never thought of it as particularly heavy.
