I made these cookies while visiting family a few years ago. The unanimous verdict on these Chocolate Sandwich Cookies filled with Pumpkin Frosting was that they’re absolutely amazing.

Chocolate and pumpkin are the perfect flavor combination of savory and sweet. The smooth savoriness of the pumpkin balances the rich, chocolatey chewiness of the cookies.

Pumpkin Sandwich Cookies

First things first, this recipe calls for canned pumpkin. Canned pumpkin is not the same as pumpkin pie filling.

Pumpkin pie filling is flavored with fall spices and is already sweetened. You will want the regular pumpkin to avoid making the pumpkin frosting overly sweet.

I like to make these sandwich cookies miniature, just about two inches across. While I personally think mini cookies are more fun to eat, they’re also easier to handle when filled with buttercream.

Chocolate Cookies with Pumpkin Frosting

  1. Cream the butter and sugar until light and fluffy. Beat in eggs and vanilla. In a separate bowl, stir together the flour, cocoa, baking soda, and salt. Add the dry ingredients to the wet. Stir until combined.
  2. Roll individual balls using a teaspoon of dough. Chill for four hours. Preheat oven to 350°F. Place cookies on a baking sheet. Bake at 350°F for 7 to 8 minutes. Remove from the oven and let the cookies cool on the baking sheet for 2 minutes. Transfer to a wire rack and cool completely.

Pumpkin Frosting Recipe

  1. Beat the butter and pumpkin in a mixer on high for 2 minutes. Add pumpkin pie spice, vanilla, and powdered sugar. Use milk or additional powdered sugar to thicken or thin the frosting as needed.
  2. Assemble the cookies by spreading frosting (I love these handy frosting spreaders!) on the bottom of one completely cooled cookie and top with a second cookie.

Ingredients 

Chocolate Cookies

  • ¾ cup butter softened
  • cups granulated white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • cups all purpose flour
  • ¾ cup cocoa
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Pumpkin Spice Buttercream

  • ½ cup butter softened
  • cup pumpkin
  • teaspoons pumpkin pie spice
  • ½ teaspoon vanilla
  • 3 cups powdered sugar
