Roasting Brussels Sprouts have converted me from hating Brussels Sprouts and made them one of my favorite sides. I’m sure there is some science and chemistry behind how it works, but somehow roasting them kills their natural bitterness and brings out the flavor. Roasting vegetables is in general the best way to make them. The sad part is I don’t do it enough because it takes so long to get the oven hot enough and then actually roast them. I have one last Thanksgiving recipe for all of you last minute planners, and believe it or not, it’s not dessert. Instead, I’m going with the healthy ingredient of squash. Although, by the time all the sausage and cheese is added, I’m not sure if it is too healthy anymore. Who cares on Thanksgiving anyway, and second of all it is a vegetable so even if you cover it with cheese, you’re still eating a vegetable. Right?!?!? My logic makes perfect sense….

The title to this recipe is actually a little misleading; I used kaniwa in this salad instead of quinoa. Kaniwa is a close relative of quinoa with the same protein packed health benefits, only it has a prettier color and has a less bitter taste. It’s a winning change, though. Kaniwa is basically the same as quinoa, only better, and the rich color adds an improved visual element to the dish.

We are almost tired of eating corn after eating several ears each night this week, but we are excited to share our favorite method with you. We wanted our recipe to have several traits: it had to be easy with no pre-cook shucking or soaking involved, and most importantly, it had to be tasty too! Cornbread with Whipped Maple Pecan Butter

So here are my first pictures of taken in manual mode on my new camera. Not a professional yet, but I’m starting to interpret the ISO and aperture to get the exposure I want. Fun stuff!

Back to this amazing cornbread with maple butter, which is why I’m sure you’re here. The inspiration for it came last weekend, after a several mile hike which included several thousand stairs. (See my previous post here for more about that.) That kind of a hike builds an appetite. On the way home, Tyler and I stopped at Smokey Bones to enjoy some ribs where they served us an amazing appetizer of cornbread and maple butter. That was the best cornbread and butter I have ever had. Maybe it was just because we were starving, but it was gone in less than two minutes from the time it hit the table. The whole time I was eating it, it was screaming to be recreated in my kitchen….
