Breakfast has always been an important meal for me. Without it, I start feeling weak and lethargic halfway though the morning. So I always make sure to eat it. It never has been fancy though, cold cereal, oatmeal or a bagel are pretty average breakfasts for me. But honestly I don’t enjoy breakfast foods all that much. I would rather have a meal of spaghetti, hamburgers or grilled cheese. But who has time for that in the morning? Not to mention, its not a healthy start to the day. Last Saturday, I had some time to do some meal planning for the coming work week and included some breakfasts. I decided to make some granola. I have recently fallen in love with my blog. When I was pondering the idea of a blog, I was unsure if I would be be committed and enthusiastic enough about it to pursue it for any length of time. While I am not claiming that I have mastered a dedicated schedule, but in the past couple of weeks I have been dedicating significant amount of my free time and thought train to this little project. It has taught me a few thing about myself (some I already knew, some new)….
Do you have a Friday night tradition? Is it pizza night? Popcorn and movies? Tyler and I don’t normally have Friday night traditions, but tonight it is rainy and my siblings brought us a DVD of their play to watch. So tonight we are going to curl up and watch the play and eat this pizza popcorn
together. Actually, I will eat the popcorn. Tyler doesn’t like popcorn for some odd reason. He says its the texture. I say he is weird. Although in his defense, while it was baking he came into the kitchen and asked what was smelling so wonderful, but I had to disappoint him by telling him it was popcorn. (I did cook him a nice supper then.) But this is amazing popcorn! And I think even he should like it….
First week of work is finished. I felt so important to be driving to work everyday with all the other cars, going someplace important just like each of them. That’s probably a weird thing to be feeling. Regardless, it was great to be working again, letting my eyes go all bleary over spreadsheets, and twisting my mind around invoice processes. Ok, I’m an accountant let me be. Also, don’t ask my husband what he ate this week. I woke up, went to work, came home and went to sleep. I’m going to give myself a couple weeks to ease into this big girl job.
I start my job tomorrow. My first adult, grown-up job where I go to work every day. Not just a few days a week, but every day. Phew! This could be an adjustment for me. But I am beyond excited. I spent a lot of this past week thinking about how the new schedule will affect my ability to get things done around the house. Laundry would sure be easier if I could continue to space it out over 3 weekday afternoons. But hopefully my time-management skills will get better again. One thing I learned in college is, the more I have to do, the more I get done. So here’s to hoping for more productive days.
A lot of my thought time was spent around meals, trying to imagine how it it will be to get home from work and then cook supper. I managed to throw a few extra meals in the freezer this week for those weeknights when things are crazy or I’m just lazy. But, the few I threw in won’t last long and I’m sure it will be an evolving process to figure out a new system. I’ll be sure to keep you updated when I find something that works. (Or warn you against serious mistakes that I will probably make.)
Throughout my life I have made a lot of batches of cookies. In my family cookies never lasted long and were in high demand in planting and harvest seasons. Thankfully, my family wasn’t picky about their cookies, because not many of my batches of cookies were very good. It has only been in the past few months that I have learned to make good cookies. Through practice batches and reading about cookie making techniques online, my cookies have improved. Here is a list of some of the tips I have learned….
Job searching is stressful! So between interviews and job application stuff, I managed a break to de-stress and to try a new recipe for pretzel rolls. Both Tyler and I love the pretzel rolls sandwiches served at our work cafeterias, so I set out to copycat those rolls. They were amazing! With a perfectly chewy, salty pretzel crust and a moist, fluffy inside, the make fun sandwiches. Plus, its hard not to just keep eating them plain. Which is what I did….
This has been a great week. I found out I passed my last section of the CPA exam and got a good job offer, and its only Wednesday. Another victory of the week was this salted caramel sauce. So much creamy, caramely, sugary, salty goodness. Salted Caramel is the “in” thing right now, and in my opinion, for good reason. The extra saltiness cuts through the extra sweetness of the caramel, making it a great contrast to what other sweet item it may be paired with. Unfortunately, it doesn’t cut the calories. But who cares anyway, especially when you pair the caramel with a sweet vanilla ice cream or a rich, velvety chocolate cupcake.
